Mont St. Michel is famous for the omelets, which are more like a soufflé -- puffy, foamy eggy deliciousness. I gather they were "invented" by Madame Poulard. There is a hotel and restaurant by that name, full of pictures of famous people who have dined there. We got our omelets at different restaurants (that's right "s" -- Jed had them two times!) on the Mont.
To be there again, you are so lucky! Drink it all in, especially the wine..
